These cookies are crafted from whole, plant-based ingredients. They are free from refined sugars, dairy, and gluten, making them suitable for a wide range of dietary needs, including those of individuals with cancer focusing on a healing diet.

Ingredients

- 1 ½ cups gluten-free rolled oats
- ¾ cup unsweetened shredded coconut
- ½ cup almond flour
- ¼ cup ground flaxseeds
- ½ teaspoon baking powder (gluten-free)
- ¼ teaspoon sea salt
- 1 teaspoon ground cinnamon
- ½ cup maple syrup
- ⅓ cup melted coconut oil
- 1 teaspoon vanilla extract
- Optional: ½ cup raisins

Instructions

1. Preheat Oven: Set your oven to 175°C and prepare a baking sheet with parchment paper.

2. Dry Ingredients Mix: In a large bowl, combine the rolled oats, shredded coconut, almond flour, ground flaxseeds, baking powder, Celtic salt, and ground cinnamon.

3. Wet Ingredients Blend: In another bowl, mix the maple syrup, melted coconut oil, and vanilla extract. Add this to the dry ingredients and stir until thoroughly mixed. Include the raisins, if desired.

4. Form Cookies: Scoop out the dough and shape into balls. Place on the baking sheet and flatten slightly.

5. Baking Time: Bake for 12-15 minutes, or until the edges turn golden brown.

6. Cooling: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.

7. Serving and Storage: Serve the cookies as a healthy treat. Keep them in an airtight container.
